2 ingredient FRESH yoghurt
Ingredients: there’s only 2
2L dairy milk
2 tbsp old yoghurt
1. Pour milk into a large pot and place on the stove to heat
2. Heat milk up to 72°C/161°F for at LEAST 16 seconds to kill any remaining bacteria inside the milk
3. Allow the milk to cool down enough so you can hold your finger in it for 10 seconds. For me is was 48°C/118°F
4. Take about 1/2 a cup of the warm milk and pour it over the old yoghurt, stirring to combine.
5. Mix this back into the warm milk. Cover with a lid then double wrap in clean towels. Leave in a spot that won’t be disturbed for 24 hours, the oven is a great place
6. After 24 hours you have yoghurt, but if you want it to be thicker you can strain it through cheesecloth set over a colander in a bowl. Leave this in the fridge overnight or up to 3 days (I left mine for 3 days and it is very very thick)
7. Eat yoghurt
