Greenbrier is another great wild edible plant that provides throughout the year. The young tender leaves can be eaten raw or cooked during the spring time or early summer. The small, thin tendrils can also be eaten raw.
The rootstock can be eaten or made into a drink. Crush it up & let it soak in water for several minutes. It can also just be eaten or dried & pounded into flour.
The dark purple fruits, (berries) are also edible. They can be found during the fall & occasionally in the winter. The outer flesh has a consistency that is reminiscent of a blueberry. They have multiple large red seed’s inside that I do not eat. The berries are sweet tasting & can be used to make jam or jelly.
It is also a wild medicinal & can be used as a poultice for external uses or as a tea for things like stomach issues. Roundleaf Greenbrier is the best variety to use for edible purposes.
