Dal Masala
Ingredients:
• Boiled whole red lentils – 2 cups
• Onion – 1
• Tomatoes – 6
• Curry leaves – 6
• Green chilies – 6
• Tamarind juice – 1/2 cup
• Red chili powder – 2 teaspoons
• Turmeric powder – 1 teaspoon
• Salt – 1 teaspoon
• Cumin seeds – 1 teaspoon
• Chopped garlic – 2 teaspoons
• Fresh coriander – as needed
• Green chilies – as needed
• Oil – 1/2 cup
Method:
Heat oil in a pan and brown the onion. Add tomatoes, curry leaves, tamarind juice, red chili powder, salt, turmeric, cumin seeds, and chopped garlic. Sauté well. Then add the lentils and mix. Finally, add green chilies and fresh coriander, cover, and let it simmer on low heat for 10 minutes.
Qeema Karelay
Ingredients:
• Beef mince – 1/2 kg
• Chopped bitter gourd – 1/2 kg
• Sliced onions – 1/2 kg
• Ginger paste – 1 tablespoon
• Garlic paste – 1 tablespoon
• Chopped tomatoes – 4
• Red chili powder – 1 tablespoon
• Salt – to taste
• Oil – 1/2 cup
• Green chilies – 3–4
• Coriander powder – 1 tablespoon
• Turmeric powder – 1 teaspoon
• Chopped fresh coriander – 2 tablespoons
• Cumin seeds – 1 teaspoon
Method:
Heat oil in a wok and fry the cumin seeds and beef mince for 1 minute. Add sliced onions, ginger paste, garlic paste, chopped tomatoes, red chili powder, turmeric, coriander powder, salt, and green chilies. Cook until the oil separates and set aside.
In another pan, heat oil and fry the chopped bitter gourd. Once fried, add the bitter gourd to the cooked mince mixture along with the green chilies. Finally, garnish with chopped fresh coriander and serve.
