We’re making a super flavorful Nimbekayi Uppinakayi — Karnataka style Lemon Pickle!
This recipe uses no oil and gives the lemon enough time to soften and soak up salt + spice beautifully.
We first cut the lemons and layered them with rock salt and sugar in a jar.
After 2 months of resting, the lemons become soft and juicy.
Then we mix it with freshly roasted fenugreek + mustard powder and chilli powder for the perfect balance of spicy, salty and tangy.
Perfect with curd rice, dosa, chapati or any South Indian meal.
