Vegetable Pulao (or Pulav) వెజిటబుల్ పులావ్
is a fragrant Indian rice dish cooked
with vegetables, spices.
It's lighter than biryani but
still full of flavor and perfect for
a quick meal or a festive side dish.
Vegetable Pulao Recipe:
Ingredients:
For the Rice:
Basmath Rice - 1/2 kg (2 cups)
(washed and soaked for 20–30 mins)
Water - 3 1/2 cups
Meal Maker(soya chunks) - 1/4 cup
Vegetables:
Carrots, diced - 1 cup
Beans, chopped - 1 cup
Green peas - 1 cup
Onion, thinly sliced - 2
Peeled Garlic - 10 pieces
Tomato chopped - 1
Green Chilies - 4 slit
Grated raw coconut - 2 tsp
Curd - 1 cup
Coriander Leaves - 2 tsp
Mentha Mint Leaves - 2 tsp
Whole Spices:
Bay leaf - 2
Cinnamon - 1 1/2 -inch piece
Cloves - 2
Japatri (mace) - 1 piece
Marati Moggu - 2
Star flower - 1
Sompu - 1/2 tsp
Green cardamoms - 2
Anasa Puvvu - 1
Coriander seeds powder - 1 tsp
Turmeric powder - 1/2 tsp
Other:
Oil - 2 tsp
Ghee - 3 tsp
Salt to taste
Fresh coriander leaves for garnish
Instructions:
Take a pan add one glass of water
heat water for a minute and put meal makers
and let it soak for ten minutes.
Prep the Rice:
Soak basmati rice for 20–30 mins. Drain and keep aside.
Prep Garam Masala paste :
Take mixi bowl add grated raw coconut, green
chilies slit, Cinnamon, cloves,green cardamoms,
peeled garlic, ginger, onion, coriander leaves,
mentha mint leaves mix well and make paste
and keep it aside.
Sauté Whole Spices:
Heat ghee in a biryani pot or pressure cooker.
Add oil ,ghee, bay leaf, Marati moggu,
cinnamon, cloves, Japatri, Star flower, cloves,
star anise, sompu let it saute for one minutes.
Add carrot, beans and green peas and put it
lid for five minutes.
Add dried (remove water) meal makers let it
saute another two minutes and add sliced onions
coriander leaves and mentha mint leaves, Garam
masala paste, Coriander seeds powder, turmeric
powder add little water and salt and cook unitl
raw smell disappears. Add choped tomato and
curd and let it saute one more minute.
Add Rice:
Add water 3 1/2 cup water and boil then add
soaked basmati rice mix gently to coat
rice with spieces and veggies and then cover
and turn the stove in sim for ten minuts.
Let it rest for 5 minutes.
Garnish & Serve:
Garnish with coriander leaves, onion
and lemon.
Serve hot with raita.
