Making two kinds of ganache.
Whipped ganache:
225 milk chocolate, 225 dark chocolate, 225 cream(30% total fats)
White chocolate ganache firm: 4.5 parts white chocolate to 1 part cream
Soft-but sets well 3:1 choc to cream.
Other ratios
Dark chocolate ganache
Firm - 3:1 (4:1 in extreme hot weather).
Medium to soft - 2:1 (my favourite ratio)
Milk chocolate ganache
Firm: 3.5:1
Soft: 3:1
