Uzbekistan - Autumn Recipes with Quince, Pumpkin, Pomegranate & Persimmon | At our Neighbour's Table

Uzbekistan is a landlocked, Muslim-majority country in Central Asia and was formerly part of the Soviet Union. The Fergana Valley is the country's fruit and vegetable paradise and was once a key trading hub on the historic Silk Road. Like many Uzbeks, Bahriddin Yunusov cultivates his own field right next to his home, where fruits and vegetables grow. In autumn, the quinces ripen. Bahriddin harvests them before the first frost. It’s a particularly sweet variety that can be eaten directly from the tree, skin and all. Bahriddin’s wife Matlyuba, together with the neighbor women, makes quince syrup for the winter. She also prepares manti — dumplings filled with pumpkin. Cooking Uzbekistan’s national dish, plov, over a wood fire in a cast-iron kazan is traditionally the role of men.
