Zalabya are sweet Egyptian fritters... they are fried then dipped in simple syrup, they are crunchy from the outside and soft squishy from the inside... they are traditionally made with flour, yeast, water and quillaia extract (I know 😊I haven’t heard of it either before) which is used as a foaming agent. I made it with the same simple ingredients just without using this additive. Traditionally, it is fried twice: once until it’s pale in color then you take off and wait for it to cool before you fry it again. However, I couldn’t really feel the difference than frying it once, especially for making a small batch at home. So here is a simple recipe for zalabya.
Ingredients using standard measuring cups:
2 cups all-purpose flour (250 g)
2 tablespoon cornstarch
2 teaspoon instant dry yeast
3 tablespoon granulated sugar
1 teaspoon vanilla powder
1/2 teaspoon salt
lukewarm water as needed (I used about a cup and one-third)
For syrup:
1/2 cup granulated sugar
1/4 cup water
¼ teaspoon lemon juice
Tips:
The dough can be placed in the refrigerator for a whole night to rise, but you have to take it out of the fridge for at least two hours before frying.
