How To Make Swedish Princess Cake Recipe 🍰 prinsesstårta

Princess Cake is a traditional Swedish layer cake dating back to the 1930s. The Princess cake consists of alternating layers of cake, homemade raspberry jam, thick pastry cream, and fresh whipped cream. Then the cake has a layer of green marzipan wrapped over and around the cake. Many times there are pink roses in the center of the cake. This time we used red raspberries to decorate the Princess Cake. In a previous Swedish Princess Cupcakes, we added pink roses on top of each cupcake. Please check out our cupcake video so you can see both alternatives.
Cake Ingredients
8 eggs
3 ounces of melted butter
1 cup of sugar
2 1/2 cups of flour
1/2 teaspoon of salt
1/2 teaspoon of baking powder
Either a store bought raspberry jam or homemade raspberry jam.
Homemade Raspberry topping ingredients:
12 ounces of raspberries
1 tablespoon of sugar
A little bit of water
cornstarch mixed with water
Almond paste ingredients
10 ounces of almond paste
1 1/2 cups of powder sugar
green food & yellow food coloring
2 cups of fresh whipped cream

Tip: Cake, marzipan, and custard can also be prepared in advance.
Cake Instructions:
1)Preheat oven at 350 F degrees.
2)First, make the cake by adding baking powder and salt into the flour. Mix the flour mixture.
3)Separate the egg whites and egg yolk in two separate bowls.
4)Next, whisk the eggs on high speed.
5)Gradually add the sugar into the egg whites. Whisk egg whites and sugar on high speed.
6)In a large bowl, whisk the egg yolks until pale and creamy.
7)Fold in whipped egg whites into the egg yolk mixture a little at a time.
8)Add in the flour mixture. Add the melted butter.
9)Grease and line the base of a round cake pan.
10)Bake in the oven for 15 minutes or until the cake is golden-brown.
Remove from the oven and set aside to cool.
Green Marzipan Instructions
1)Knead in the bowl the almond paste until it forms a stiff dough.
2)Add a tiny amount of green food coloring.
3)You can add yellow food coloring for a pastel green.
4)Knead to an even green color.
5)Roll out the marzipan on a surface lightly dusted with icing sugar.
6)Roll out the green marzipan to create a circle. Large enough to cover the cake.
Assembling the Princess Cake
1)Fold one-third of the whipped cream into the custard in a bowl. Set remaining whipped cream aside.
2)Place the 1st cake layer on a cake plate.
3)Spoon the raspberry jam over the 1st cake layer. Spread the raspberry jam evenly within the border.
4)Spread custard cream over the jam.
5)Place the second layer cake on top.
6)Spread over raspberry jam on top of the cake.
7)Spread custard cream over the jam.
8)Spoon over whipped cream.
9)Place the third layer cake on top.
10)Spoon over cake the remaining whipped cream. Smooth whipped cream into a small dome shape on the top.
11)Set aside in the fridge for an hour.
12)Lift the marzipan up over the cake and using your hands.
13)Shape the marzipan around the sides of the cake to get a smooth finish. Trim any excess.
14) Decorate with either Marzipan roses or fresh fruit.
