Cold Weather Camping Meals / One-Pot Cowboy Bean Stew

Cold Weather Happens! In all my years on the water kayaking and wilderness camping on the west coast I can count on one hand the number of days that it was warm and sunny. Most of my summer trips have involved heavy rains, wind storms and even a day when it hailed to the point that it accumulated on the spray decks enough that we could make snowballs and have a snowball fight while paddling! It is not always nice and on those days you need something fast, hot and hearty to warm your insides before tucking into you sleeping bag for the night. For that I pull out my bag of ingredients to make a Cowboy Bean Stew. Cooked quickly in one pot this stew is a go to camping meal for sure.
At home, portion beans and tomato into ZipLoc bags and freeze so they do double duty of lasting longer while also helping to keep the rest of your fresh food cold as you travel in your kayak.

You will need:
2-3 sausages
one small onion, diced
4 cloves garlic, minced
1 cup baked beans
1 cup canned diced tomatoes with juice
A handful of mixed beans, or the bean that is nearest to your heart
1/2 - 1 tbsp chili powder
pinch dried chili flakes
In camp, heat oil in pan and cook sausages until dark golden brown. Remove from heat and cut into bite-sized pieces. Return to pan and add onion and garlic. Saute with sausage pieces until onion is tender and turning golden. Add in baked beans, tomato, and the extra beans with the seasoning and mix well. Reduce heat and simmer until sauce thickens. Enjoy!
