4 eggplants or 2 1/2 cup grilled eggplants
5 - 6 gloves of garlic
1/4 cup tahini paste
2 tablespoons of plain yogurt
3-4 tablespoons lemon juice
One tablespoon Himalayan salt
1 cup pomegranate seeds or 1/3 cup pomegranate juice
2 tablespoons of pomegranate seeds for garnish (optional)
4 tablespoons of parsley
1- 2 teaspoons of olive oil or to taste
