KOREAN BEEF BOWLS
Ingredients
For the sauce
¼ packed cup (55g) brown sugar
¼ cup (60ml) low sodium soy sauce
2 teaspoons sesame oil
1 teaspoon crushed red pepper flakes
For the beef
1 pound (454g) lean ground beef
2 tablespoons (30ml) neutral oil
5 cloves garlic - minced
2 teaspoons grated ginger
2 green onions - chopped
Sesame seeds - for garnish
Instructions
1. In a small bowl, mix the sauce ingredients and set aside.
2. Heat a large pan to medium-high heat with the neutral oil, add the beef, and cook until well browned. Break up the beef with a wooden spoon or meat masher.
3. Add the garlic and ginger to the pan and cook until fragrant (1-2 minutes).
4. Add the sauce and cook over medium heat for 2 minutes. Add a splash of water if the beef is too dry.
5. Remove from the heat and serve over rice with a sprinkle of sesame seeds and green onion.
GROUND BEEF HASH
Ingredients
1 pound (454g) potatoes - diced
1 pound (454g) ground beef
1 medium onion - diced
salt and pepper - to taste
1 teaspoon paprika
1 teaspoon onion powder
1 teaspoon garlic powder
3 Tablespoons (42g) butter
2 green onions - minced
Instructions
1. Boil potatoes until almost fork tender in salted water.
2. Heat a large pan to medium-high heat and add the ground beef. Cook the beef until it is well browned. Break up the meat with a wooden spoon or meat masher.
3. Add the onions, butter, paprika, onion and garlic powder, and salt and pepper. Cook until browned, while pressing down with a spatula to brown the hash.
4. Taste test and adjust salt and pepper as needed. Add the green onions, mix through, and serve immediately.
SPAGHETTI MEAT SAUCE
Ingredients
½ pound (227g) spaghetti
¼ cup (60ml) olive oil
1 pound (454g) ground beef
Salt and pepper - to taste
1 small onion - finely diced
8 cloves garlic - minced
3 small anchovy fillets
½ teaspoon crushed red pepper flakes
1/2 cup (120ml) dry white wine
1 28-ounce can (794g) plum tomatoes - hand crushed
¼ cup (23g) grated pecorino
Instructions
1. Bring a large pot of salt water to a boil and cook the spaghetti until 1 minute less than al dente.
2. Heat a large pan to medium heat with olive oil and add the ground beef. Brown the beef and break it up with a wooden spoon or meat masher.
3. Season the beef with salt and pepper.
4. Make some room in the pan and add the onion. Saute for a few minutes then add the garlic and anchovies. Break the anchovies up with a wooden spoon. Once the garlic is golden and the anchovies dissolve, add the red pepper flakes.
5. Add the wine and turn the heat to high. Once the wine almost evaporates, add the plum tomatoes and cook at a lively simmer, stirring occasionally.
6. Taste test the sauce and season with salt and pepper.
7. Remove half of the sauce to a bowl. Add the spaghetti along with the pecorino and toss to coat. Once the pasta reaches al dente, remove the pan from the heat. Add more sauce as needed, then serve right away. Enjoy!
