I've been sharing a lot of recipes from my paternal grandmother, but in this video, I'm sharing one that's inspired by my maternal grandmother's heritage from China - Radish cake is a dim sum favourite, and it's packed full of umami flavours! Vegan Radish Cake (Lo Bak Go)
Makes a 8 x 10in cake
1kg white radish (daikon)
8 dried shiitake mushrooms, soaked in hot water and diced
2 red onions, diced
4 cloves garlic, diced
2 - 3 stalks spring onions or scallions, sliced
1 cup plant based mince or tofu crumbles (recipe below)
1 - 2 tbsp neutral vegetable oil
1 tsp sugar (I forgot to show this in the video)
1.5 tsp white pepper
1 vegetable stock cube
1.5 tbsp vegetarian oyster sauce
Salt to taste
200g regular rice flour (not glutinous)
375ml water (mix with the water from soaking the shiitake mushrooms)
Tofu Crumbles
Makes 1 cup
300g firm tofu
1 tbsp oil
1 tsp salt
Bake in a preheated oven at 180°c for 20 minutes until dehydrated
