Our Cherry Bounce Recipe:
Starting with a cherry brandy:
8 cups of cherry brandy
2 kilograms of cherries
4 cups sugar
4 cinnamon sticks broken
2 1/4 inch pieces of whole nutmeg
2 allspice berries

Mash cherries and save the juice.
Combine the juice from the cherries, the brandy, and the sugar to dissolve.
Once everything is combined, add in the mashed cherries. Then, add cinnamon, nutmeg, and allspice (we put ours in a spice bag for easy removal).
Sit aside for 1 week and then taste. This process will depend on you and how much spice or flavor you want in your cherry bounce. We left our spices in for three weeks and then removed the spices and cherries. Then, we have put it away to age a bit and taste in 5 months.
