Ingredients:
12 medium to large sized button mushrooms
Stuffing:
1/4 onion
2 garlic cloves
2 cups spinach
4 oz cream cheese
1/4 cup Parmesan
1 tablespoon butter
Topping:
1 cup breadcrumbs
1 tablespoon Herbs de Provence
1 tablespoon melted butter
Instructions:
1. Take stems off the mushrooms.
2. Chop the stems, garlic, and onions.
3. Melt 1 tablespoon butter on medium heat and add in the chopped vegetables. Cook until the onions are cooked all the way.
4. Add in spinach, cook until spinach has wilted.
5. Put the cooked stuffing in a bowl, add softened cream cheese and Parmesan.
6. Add herbs and melted butter to breadcrumbs.
7. Fill the mushroom caps with the stuffing and top with breadcrumbs.
8. Bake mushrooms in the oven at 350F for 15 to 20 min.
