I've been making this Sweet Potato Casserole at holiday dinners for years and my family always enjoys it. I hope yours will, too. Old-Fashioned Sweet Potato Casserole
7 to 8 medium sized sweet potatoes, baked until soft
1/4 to 1/3 can sweetened condensed milk
1/3 cup orange juice
1/2 cup sugar
3/4 teaspoon salt
Cinnamon to taste
Crumb topping (recipe to follow)
Directions:
1. Preheat oven to 350 degrees F. Spray a small baking dish with cooking spray and set aside
2. Peel sweet potatoes and cut off any dark spots. Slice and put into a mixing bowl. Use a pair of scissors to cut into smaller pieces to avoid strings
3. Add remaining ingredients and mix until smooth.
4. Spread sweet potato mixture into baking dish and top with crumb topping.
5. Bake for about 25 to 30 minutes until topping is browned and sweet potatoes are heated through.
Crumb Topping:
1 cup all-purpose flour
1/2 cup brown sugar
1/2 cup white sugar
A few dashes of salt
Cinnamon to taste
1 stick softened butter
Add all ingredients to a medium bowl and using your hand, mix together until mixture resembles beach sand. (It will hold together but will crumble apart easily).
Sprinkle on top of sweet potatoes, apples for apple crisp, Dutch apple pie, etc.
