Missing our popovers?
Executive chef Kevin G. shares his recipe for the iconic popovers we’ve served in our restaurants for more than 60 years. Light & airy, they’re best enjoyed hot out of the oven for weekend brunch (or anytime, really!). Don’t have a popover pan? A classic muffin tin works fine, too! P.S. Now it's your turn!
Ingredients:
4 c. all-purpose flour
4 c. milk, at room temperature
6 eggs, at room temperature
1 tsp. baking powder
1 1/2 tsp. salt
Instructions:
In a large mixing bowl, beat the eggs on medium until foamy, or for about 3 minutes.
Reduce speed to low and add the milk.
Gradually add the salt, baking powder & flour & beat on medium for an additional 2 minutes.
Let the batter rest for about 1 hour at room temperature.
While batter is resting, preheat the oven to 425 degrees
Place the popover pan on a cookie sheet & heat in oven for about 30 minutes
Coat heated pan with nonstick spray & fill cups to the top with batter
Transfer pan to the oven& bake for about 15 minutes, until popovers are a deep golden brown
Turn popovers out & serve immediately with your favorite spread
