Ingredients:

Green Coriander: 1 cup (Hara Dhania)
Green Chilli: 5-6 (Hari Mirch)
Tomato: 1 large
Oil: 1/2 cup
Cumin: 1 teaspoon (Zeera)
Onion: 2 large (chopped)
Ginger Garlic paste: 1 tablespoon (Lehsan Adrak Paste)
Turmeric powder: 1/4 teaspoon (Haldi Powder)
Red Chilli powder: 1 teaspoon (Laal Mirch)
Coriander Powder: 1 teaspoon (Dhania Powder)
Black Pepper: 1/2 teaspoon (Kali Mirch)
Cumin Powder: 1/2 teaspoon (Zeera Powder)
Salt: 1 teaspoon (Namak)
Yogurt: 1 cup
Garam Masala: 1/2 teaspoon
Water: 1 cup
Boiled Eggs: 5-6
Green Chilli (for garnish)
Fenugreek: 1 teaspoon (Kasuri Methi)
Instructions:

Prepare a paste by blending green coriander, green chillies, and a large tomato. Set it aside.

In a pan, heat 1/2 cup of oil and add 1 teaspoon of cumin (Zeera). Fry for a few seconds until it releases its aroma.

Add 2 chopped onions to the pan and fry until they turn golden brown (approximately 3-4 minutes).

Mix in 1 tablespoon of ginger garlic paste and continue frying for another minute.

Now, add 1/4 teaspoon of turmeric powder, 1 teaspoon of red chilli powder, 1 teaspoon of coriander powder, 1/2 teaspoon of black pepper, 1/2 teaspoon of cumin powder, and 1 teaspoon of salt. Stir the spices well and let them cook for a minute.

Pour in the previously prepared green paste and cook it for 3-4 minutes.

Reduce the flame to low and add 1 cup of yogurt to the mixture. Cook for an additional 3-4 minutes, allowing the flavors to blend.

Add 1/2 teaspoon of garam masala and 1 cup of water to the pan. Cover it and let it simmer on low heat for 3-4 minutes.

Now, gently place 5-6 boiled eggs into the curry, making sure they are evenly submerged.

Garnish with some fresh green chillies and sprinkle 1 teaspoon of fenugreek (Kasuri Methi) over the curry.

Cover the pan again and let it cook for another 3-4 minutes, allowing the eggs to absorb the rich flavors of the curry.

Serve hot with steamed rice, naan, or roti for a scrumptious meal that will delight your taste buds!
