Outdoor Stove Makes Best Frittata Ever! (Herb, Ham & Tomato Frittata)

This may be the best and simplest frittata I've made so far! It was so savory and perfect with a gentle smoky flavor imbued by the rocket stove!
You can also easily make this on the stove top away from the humidity and heat of summer :)
Here's what you'll need:
2 T Butter-- I used Country Crock Plant Butter
1/2 lb Ham, diced
6 Eggs
1/4 c Heavy Cream or Milk-- I used Country Crock Non Dairy Whipping Cream
1 tsp Salt
Black Pepper
6 Cherry Tomatoes, halved
1/2 c fresh Parsley, chopped
1 tsp fresh Thyme, minced
Heat skillet and add butter. When melted, add ham. Cook about 3 minutes. In a bowl, whisk together, eggs, milk, salt and pepper. Pour into skillet. After a couple minutes just as eggs begin to set, add tomatoes and sprinkle herbs over top. Cover and allow to cook about 10 minutes. Place under a broiler for a couple minutes if eggs on top need more cooking time to cook through.
