Okonomiyaki In a Waffle Iron | Mad Genius | Food & Wine

We’ve all gotten waffle irons as gifts but somehow never get around to making waffles. The good news is that there are a lot of other ways to use them! Believe it or not, your trusty waffle iron can be used to cook egg dishes, including okonomiyaki, a Japanese mash-up of an omelet and a pancake.
Cook the bacon on the waffle iron. Meanwhile, beat the eggs with the stock, butter, flour, and stock. Remove the bacon from the waffle iron. Scatter the cabbage, carrot, and scallions on the waffle iron and cooking on high, without closing for about 30 seconds. Pour the egg mixture and cook without closing, until the eggs start to set on the edge. Close the waffle iron and let it cook for about thirty seconds.
Open the waffle iron and fold the okonomiyaki in half. Serve topped with bacon, Kewpie mayonnaise, Sriracha, bonito flakes, and sliced scallions.
With a little help from the waffle iron, this is a Mad Genius version of okonomiyaki.

Ingredients:
2 slices of bacon, halved crosswise
2 large eggs, beaten
1/2 cup chicken stock or low-sodium broth
1 Tbsp. melted butter
1/2 cup all-purpose flour
1/2 tsp. kosher salt
1/2 cup shredded green cabbage
1/4 cup shredded carrot
1/4 cup thinly sliced scallions, plus more for serving
Kewpie mayonnaise, srircha and bonito flakes (optional), for serving
