On this Rum Revival Review, I taste Don Q Double Aged Cognac Cask Finish.
This release is a molasses based blend of both light and heavy rums. Both types of rum are fermented a yeast strain that was cultivated in the 1950s.
The light rum was fermented around 40 hours and then distilled on a multi column still. Meaning its going to distilled to a higher proof and have a lot less of the flavor compounds developed in fermentation.
The heavy rum is fermented 60+ hours and distilled on a Vendome single column still from 1934. Meaning it comes out of the still with a lower abv than the light rum but retains much more of the flavor compounds developed during fermentation.
The rum is aged in American White Oak ex-bourbon barrels for 5-8 years and then finished two years in French Oak Cognac Casks.
