How to Make Delicious, Creamy Clam Chowder

This delicious, rich and creamy clam chowder is the taste of New England in a cup! So easy to make, this chowder recipe is sure to be your new favorite!
INGREDIENTS:
3 ounces bacon diced
2 cups diced onion
1 cup diced celery
3 cups diced red potatoes (keep skin on)
1 teaspoon dried thyme
1 teaspoon ground black pepper
2 teaspoons lemon zest
1 Tablespoon fresh lemon juice
6 cans chopped clams (reserve liquid)
1/2 cup butter
3 1/2 cup clam juice
1/2 cup all-purpose flour
1 1/2 quarts whipping cream
DIRECTIONS:
1. Sauté bacon in a large pot until translucent.
2. Add the onions and celery and sauté for 5 minutes.
3. Add potatoes, thyme, pepper and lemon zest, stir to combine.
4. Add clam juice (enough to slightly cover potatoes). Simmer until potatoes are tender - about 10 minutes.
5. Melt the butter in a small saucepan. When it is bubbling, add the flour and cook for about 5 minutes, stirring often, then set aside.
7. When the potatoes are tender, add clams and lemon juice and simmer for 2 minutes.
8. Stir in the flour butter mix (roux) and continue simmering until thick. This is the chowder base.
9. In a separate saucepan, heat cream to gentle simmer Do not boil.
10. Stir the h cream into the chowder base, mix together, and remove from heat.
11. ENJOY!
