Mint Chip Ice Cream
Ingredients:
2 cups heavy cream
1 ½ cups whole milk
7 oz chocolate chips or chopped chocolate, melted,
⅔ cup sugar
1 tsp. Vanilla extract
⅛ tsp salt
4 - 5 egg yolks
1 ½ tsp. Peppermint extract
½ tsp. Coconut oil
Directions:
Freeze the ice cream maker insert the night before.
Place the heavy cream, milk, sugar, egg yolks and salt in a 2 quart saucepan. Make sure everything here is cold. Turn the heat on low and whisk to combine. Continue to whisk and gently bring this mixture to 180 degrees F. This process slowly tempers the egg and will coat the back of a spoon.
Place a strainer over a medium size bowl and pour the mixture through it. This will catch any clumps so your ice cream will be smooth and creamy.
Add the vanilla and peppermint extracts and stir them in. Let this cool on the counter for at least 45 minutes and then cover and place in the refrigerator overnight.
The next day place the chocolate chips in a bowl and microwave on high for 20 seconds stirring after each 20 second intervals. It will probably take 4 or 5 sessions of this to get the chocolate completely melted. Add the coconut oil and stir until incorporated.
Pour the chocolate out onto a parchment paper covered baking sheet. Spread the chocolate out very thin, ⅛ inch thick. Place the tray into the freezer. After about 2 hours the chocolate should be frozen. Take it out and chop the chocolate into small pieces and then place it back into the freezer until you are ready to add it to the ice cream. Be quick about chopping the chocolate as it will tend to melt.
Let’s make ice cream! Pour the ice cream mixture/custard into the frozen insert, add the paddle and churn away. This should take 25 -30 minutes so when it’s about 25 minutes in, I start adding those chocolate chips, a bit at a time until they are all mixed in.
Place your now soft serve mint chip ice cream into a glass container with a tight fitting lid and freeze. Take a taste, you’ll love it!!
