全蛋液隔温水浴法是借助40℃左右的温水辅助,让蛋液更容易被打发且质地更稳定细腻的方法,常用于制作戚风蛋糕、舒芙蕾等甜点。
操作步骤很简单:
1. 准备一个比打蛋盆略大的容器,倒入40℃左右的温水(手摸起来温热不烫),水位不要超过蛋液的高度。
2. 将盛有蛋液的打蛋盆坐在温水里,用电动打蛋器中高速搅打,期间可以偶尔提起打蛋盆观察状态。
3. 打发到蛋液体积膨胀、颜色变浅发白,提起打蛋器能拉出清晰的纹路,且纹路不会很快消失时,即可停止,随后脱离温水继续后续操作。
4. 这个方法的关键是控制水温,水温过高会烫熟蛋液,导致无法打发;水温太低则起不到辅助作用。
The water bath method for whisking egg liquid involves using warm water of around 40°C as an aid. It makes the egg liquid easier to whisk, resulting in a more stable and smooth texture, and is commonly used in making desserts such as chiffon cakes and soufflés.
The steps are quite simple:
1. Prepare a container slightly larger than the mixing bowl. Pour in warm water (around 40°C—warm but not hot when touched by hand) and ensure the water level does not exceed that of the egg liquid.
2. Place the mixing bowl with the egg liquid into the warm water. Whisk at medium-high speed with an electric mixer, and occasionally lift the mixing bowl to check the consistency during the process.
3. Stop whisking when the egg liquid has doubled in volume, turned pale and whitish. The mixture is ready when you lift the mixer, a clear, distinct ribbon forms and does not fade away quickly. Then remove the bowl from the warm water and proceed with the next steps.
4. The key to this method is controlling the water temperature. If the water is too hot, it will cook the egg liquid, making it impossible to whisk properly; if the temperature is too low, the method will not serve its assisting purpose.
