2 courgettes
1 cauliflower
200 g green beans
2 onions
brine the above using 2 tbsp salt for 2 hours
drain all liquid after 2 hours
put the following into a pan bring to the boil to thicken.
if sauce does not thicken add a cornflour slurry.
1ltr malt vinegar
6tbsp mustard powder
2 tbsp coriander seeds
4 tbsp mustard seeds
4tbsp cumin
3tsp turmeric
3tbsp flour
2 Bay leaves
400 g sugar
2tbsp cornflour and splash of water to make a slurry - if required
turn off the heat once thick
add vege to thickened sauce give a good mix coating the vegetables
place into sterilised jars - ready after 4 weeks once opened use within 4 weeks
