Pressure Cooker Carrot Soup

This is the FASTEST way to make carrot soup. This Pressure Cooker Carrot Soup is comfort food in a bowl and it's ready in a snap!
Ingredients:
1 TBSP olive oil
2 large onions, rough chopped
2 lbs carrots, cleaned, peeled and rough chopped
1" piece ginger root, peeled and thinly sliced
4 cups chicken stock
1 cup orange juice
Salt & pepper to taste
Using the "sauté" or "sear" setting on your pressure cooker, add 1 TBSP to the insert.
Stir in onions.
Add salt and pepper.
When onions become translucent, add ginger.
When ginger softens, stir in chicken stock and orange juice.
Close the lid and use the "soup" setting (or HIGH pressure for 30 minutes).
When cooking time is completed, blend the vegetables and liquid in either a blender or food processor.
