This soy-free, sugar-free mayo is so quick and easy that you'll never want to go back to the store bought kind! It's much healthier because it uses extra light olive oil instead of soybean or canola oil, but it tastes just as good as regular mayo.
Try this foolproof method which works every time and requires just 1 minute (or less) of blending!

Recipe Tips:
-Raw egg warning: To minimize risk of salmonella, buy fresh organic eggs and avoid making contact between the inside of the egg and the shell! Separate out the egg yolk with your bare hands instead of the eggshell.
-You can also buy pasteurized eggs, or pasteurize them yourself by submerging them in a pan of water and heating them to 140° F and keeping them at that temperature for 3 1/2 minutes.
-Be sure to use extra light olive oil, not extra virgin!
-If you don't have a 2-cup glass measuring cup, you can also use a wide-mouth mason jar (162 oz) or the blender cup that comes with your immersion blender. This recipe will NOT work with a bowl - the container must be narrow!
-"Scant" 2 cups = just barely 2 cups of oil (2 cups minus 2 Tablespoons)
-Lime juice works well in place of lemon
-White wine vinegar works well in place of apple cider vinegar
-I didn't add enough oil to the mayo for the video, so the mayo looks a little bit thinner
-You can halve everything (including the yolk and the whole egg, which you can whisk first to make dividing it in half easier) to make less than a full jar of mayo
