Video shows how to make elderberry jelly.
Recipe:
3 lbs or 12 c. elderberries, washed and de-stemmed
1 c. water
1/4 c. lemon juice
1 package fruit pectin
1/2 tsp. butter or margarine (optional)
4 1/2 c. granulated sugar
1) Put berries in large saucepan (I use 8 qt. saucepan/pot). Add 1 c. water to avoid sticking/burning. Crush berries using potato masher or other method.
2) Cover and bring to a boil. Simmer over Med-Low heat for 5 minutes.
3) Pour into colander or sieve lined with cheese cloth or a tea towel. Let drip for up to a few hours. Press to ensure all the juice has gone through.
4) Pour the juice (3 c.) back into clean large, clean, saucepan. If juice is not 3 c., add up to 1/2 c. of water to make up the 3 c. needed.
5) Measure the sugar into a separate bowl and keep handy by the stove.
6) Add the lemon juice to the berry juice and stir well. Add the pectin to the mixture and whisk well to dissolve. Add the butter or margarine to reduce foaming (if desired).
7) Bring mixture to a full rolling boil on Med-High to High heat, stirring constantly.
8) Add sugar to saucepan mixture. Return to full rolling boil. Continue full rolling boil for exactly 2 minutes, stirring constantly.
9) Remove from heat. Skim off foam with metal spoon.
10) Ladle jelly into jars filling to 1/4 inch from the top of the jar. Put on lids and rings to finger tight.
11) Put jars in water bath canner and cover with at least 1 inch of water. Process at full boil for 5 minutes.
12) Remove jars from canner and let set on counter until completely cooled.
