Thai Cashew Nut Chicken is an addictive combination of spicy and sweet stir fry chicken with roasted cashew nuts. This easy 30-minute dish packs a punch with lemongrass, ginger, garlic, red chilies and onion.
The heat from the chilies, the sweetness of the brown sugar and the citrusy lemongrass balances this stir fry dish beautifully. You can totally tone down or omit the chilies and this dish will still carry a lot of flavour but that spice is what makes this dish my favourite.
Pair this dish with Garlic Butter Fried Rice (recipe on my website) or even steamed white rice.
