Pineapple Salsa:
1 can crushed pineapple, well drained
1 1/2 large green peppers
1 1/2 medium Vidalia or other sweet onion
1 clove of minced garlic (about 1/2 teaspoon)
1/2 to 3/4 cup chopped cilantro (or about 2 tablespoons dried)
splash of lime juice
Optional - 1/2 teaspoon cumin
Pepper and onion amounts should be about equal. Go easy on garlic!
