I’ve made it with chicken, pork, mushrooms, and zucchini. No matter what I choose, it works perfectly every time, so long as I pair it with some pickled onions or chiles. The options are endless, and I’ve included two extra recipes below in case you prefer to bake or need a vegan-friendly alternative. Ingredients
3 to 5 pounds of beef chuck short ribs
7oz soda of choice (even mineral water will work)
3oz achiote paste
1/2 cup of orange juice
Juice of half a lemon or lime
1 tsp chicken bouillon
1/2 stick of cinnamon

Slow cooking options
2 hours on high, then 3 to 4 hours on low
4 to 5 hours on high
8 hours on low
