Irish Champ Recipe
• 4 large potatoes, peeled and chopped
• 1/4 cup butter
• 1/2 cup milk or heavy cream
• 1/2 cup chopped scallions (green onions)
1/4 cups shredded of Chopped Chives
• Salt and pepper to taste
1 Tbsp of CornFlour
Instructions
1. Boil potatoes until tender. Drain and mash.
2. In a seperate pot bring to a boil the milk, butter salt,pepper, Chives and Spring Onions.
3. Add the cornflour and keep stirring until the sauce thickens.
4. Combine the potatoes and Sauce until well combined, Serve hot with a Knob of butter on top.
