HOW TO MAKE JAMAICAN CASSAVA PUDDING

INGREDIENTS:
. 2 Cup(s) Cassava, grated or ( cassava power will do )
, 2 1/2 Cup(s) Coconut Milk
, 1/4 Cup(s) All-Purpose Flour
. 1 Tbs Soft Butter
. 1 Cup(s) Brown Sugar or ( granulated sugar )
, 1 Tsp Nutmeg, grated
, 1 Tsp Baking Power
, 1 Tsp Ground Cinnamon
, 1 Tbs Vanilla Extract
. 1 Tsp Salt
, 1/2 Cup Raisin (Optional )
NOTE:
Peel & cut the cassava into large chunks. Using a knife,
cut out the woody fibers in the center ( they can contain
traces of cyanide and should not be added to the pudding.)
INSTRUCTIONS:
1. Wash and peel cassava, then grated
. 2 Combine sugar, Vanilla, coconut milk and cassava,
Separately , combine flour, baking, nutmeg, salt, cinnamon
Then add to the cassava mixture. Mix until smooth.
. 3 Pour into a greased and lightly floured 6+6 pan and bake
in a pre - heated oven at 300 degrees for two hours.
Best served warm .
