*今天自己发面做椰蓉土司面包,和之前用Costco的Brioche Bun的生胚做的椰蓉土司做个对比。
*面包发面有很多方法,今天用“直接法”,这是最传统最普通的面包发酵法,即将所有材料混合后,揉成筋膜,然后只进行一次发酵来制作出面包。
#面包材料:
高筋面粉 Bread Flour 320 g
盐 Salt 5 g
细砂糖 Caster Sugar 18 g
酵母 Yeast 4 g
鸡蛋 Egg 1
炼乳 Condensed Milk 35 g
牛奶 Milk 70 ml
冷水 Cold Water 90 g
软化黄油 Softened Butter 32 g
#椰蓉馅制作:
软化黄油 Softened Butter 32 g
糖粉 Icing Sugar 20 g
蛋黄 Egg Yolk 1
炼乳 Condensed Milk 10 g
椰蓉 Desiccated Coconut 36 g
烤箱提前10-15分钟预热至350°F/ 180°C
中下层烤35分钟直到表面金黄.为了防止上色过度,20分钟后盖上锡箔纸
Preheat the oven to 350°F/180°C 10-15 minutes in advance
Bake in the middle-lower rack for 35 minutes until the surface is golden brown.
Cover with a layer of tin foil after 20mins to avoid burning the top
