Food Defense is procedures and processes implemented to protect against intentional contamination of the food supply. This presentation will describe roles and responsibilities of various entities in food defense, including FSIS as a regulatory authority. Additionally, will discuss the concept of a functional food defense plan and consideration food production facilities can use to prevent, protect again, mitigate, respond to, and recover from an intentional contamination incident.
