🧁 Fluffy Cacao Soufflé Pancakes
Made with just 2 eggs!
🥚 Ingredients
Yolk – 2 EA
Milk – 10g
Cacao Powder – 4g
Cake Flour – 28g
Baking Powder – 1g
Egg White – 70g
Sugar – 24g
(Optional) Vanilla essense, lemon juice
🍽️ Instructions
1. Mix the yolks with a bit of vanilla bean. Add milk and whisk until smooth.
2. Sift cake flour, baking powder, and cacao powder into the yolk mixture and mix well.
3. Make the meringue:
Start whisking egg whites.
Once foamy, gradually add sugar in 2–3 parts.
Whisk until stiff peaks form (meringue should hold shape).
Optional: Add 2g lemon juice for extra stability.
4. Gently fold a small amount of meringue into the yolk batter, then fold in the rest carefully to keep the batter fluffy.
5. Preheat a pan on low heat, grease with butter and wipe with kitchen towel.
6. Scoop batter with an ice cream scoop and place on the pan.
7. Add a bit of water to the pan, cover with lid, and steam-bake on low heat for 4–5 minutes.
8. Flip and cook the other side. Serve immediately.
