Your new weeknight hero: a sizzling, cheesy, one-pan Spicy Beef Skillet that’s ready in about 15 minutes. Customize the heat with your favorite Rotel, finish it cheesy, and make it creamy with a dollop of sour cream. Family-friendly, budget-friendly, and SO satisfying.
Ingredients:
1 lb ground beef, browned and drained
1 can Rotel tomatoes (choose your heat)
4 cups chicken stock/broth
1 cup shredded cheese (I used taco blend)
Optional: 1/2 cup sour cream
If using a boxed skillet mix: add the noodles + seasoning packet now
If not using a mix: add about 8 oz short pasta + 1–2 tbsp taco seasoning (optional)
Directions:
In a 12-inch skillet, combine cooked ground beef, Rotel, chicken stock, and noodles/seasoning (either from your boxed mix or your own pasta + seasoning).
Bring to a boil, then reduce heat and simmer 12–15 minutes, stirring often to prevent sticking.
When noodles are cooked to your liking, turn off heat and stir in the shredded cheese until melted.
For a creamy version, stir in the sour cream until fully blended. Cover and rest 5 minutes before serving.
Serve with: green onions, cilantro, lime, or crushed tortilla chips.
