🥣 Ingredients List
⭐ Ugani Ingredients
Maramaralu / Poha – 2 cups (medium thickness)
Onions – 2 (finely chopped)
Green chillies – 3 (chopped)
Tomato – 1 (optional, chopped)
Curry leaves – 1 sprig
Ginger – 1 small piece (chopped)
Roasted peanuts – ½ cup
Turmeric powder – ¼ tsp
Red chilli powder – ½ tsp
Lemon juice – 1 tbsp
Coriander leaves – few
Salt – as required
Oil – 2 tbsp
Water – as needed
🌶️ Mirchi Bajji Ingredients
Bajji Mirchi (big green chillies) – 8 to 10
Besan (gram flour) – 1 cup
Ajwain – ½ tsp
Baking soda – a pinch
2 Green chilli paste
Turmeric – ¼ tsp
Jeera – ½ tsp
Salt – as required
Water – to make batter
Oil – for deep frying
🍳 Step-by-Step Making Process
⭐ Ugani Preparation
1. Take poha in a bowl, wash gently and drain the water. Keep aside for 5 minutes.
2. Heat oil in a pan, add mustard, cumin, ginger, green chillies, onions and fry until soft.
3. Add curry leaves, turmeric and mix well.
4. Add roasted peanuts and mix.
5. Add soaked poha, salt, chilli powder and mix gently.
6. Cook on low flame for 2 minutes.
7. Switch off the stove and add lemon juice + coriander leaves.
8. Mix well and keep aside warm.
🌶️ Mirchi Bajji Preparation
1. Slit chillies lengthwise and remove seeds (optional for less spice).
2. Mix besan, Besan flour, salt, turmeric, chilli powder, ajwain, jeera & baking soda in a bowl.
3. Add water little by little to form a slightly thick bajji batter.
4. Heat oil for deep frying.
5. Dip each mirchi in the batter and coat well.
6. Fry on medium flame until golden and crispy.
7. Remove and serve hot.
🍽️ Serving Style
Place hot Mirchi Bajji on a plate
Serve fluffy Rayalaseema Ugani on the side
Add chopped onions + lemon + coriander for extra flavour
