DYNAMITE FRIED SANDWICH
Ingredients for Dough
Flour 2 cups
Milk powder 2 tbsp
Salt ½ tsp
Sugar 1 tbsp
Egg 1
Instant yeast 1 tbsp
Oil ¼ cup
Warm water to knead the dough
Ingredients for Chicken Marination
Chicken breast cut into thin julienne 1
Baking powder ½ tsp
Black pepper ½ tsp
Salt ½ tsp
Crushed red pepper ½ tsp
Garlic powder ½ tsp
Chicken powder ½ tsp
Ginger garlic paste 1 tsp
Soy sauce 1 tsp
Chili sauce 2 tbsp
Beaten egg ½
Flour 2 tbsp
Corn flour 2 tbsp
Oil 2 tbsp
METHOD
Marinate all above with chicken and deep fry.
Ingredients for Sauce
Honey ¼ cup
Milk 3 tbsp
Ketchup ¼ cup
Mayonnaise ¼ cup
Chili sauce 2 tbsp
Paprika ½ tsp
Iceberg lettuce chopped mixed with sauce
Chopped coriander as required
Fried chicken as required
For Bread
Wash beaten egg and sesame seeds.
To Assemble
Lettuce leaves and prepared filling.
METHOD
Knead the dough, let it rise for 30 min till double. Shape into small or long buns, place on a greased tray, rise again for 15 mins then brush some egg on top, sprinkle sesame seeds, marinate chicken and deep fry. Mix ingredients for sauce, mix with fried chicken, chopped coriander and lettuce. Assemble sandwiches as shown.
GARLIC PARMESAN CRISPY FRIES
Ingredients
Potatoes large cut into thick French fries 3
Blanched with boiling water with salt and chicken powder for 10 mins
Ingredients to Coat
Corn flour 3 tbsp
Flour 3 tbsp
Paprika 1 tsp
Chicken powder 1 tsp
Salt ½ tsp
Garlic powder ½ tsp
Oil to deep fry fires till crisp
To Toss in Garlic Butter
Butter 2 ounce
Chopped garlic 1 ounce
Parmesan cheese 2 tbsp
Mixed herbs 2 tbsp
METHOD
Coat blanched potatoes chip in flours and seasonings, deep fry till golden crisp. Prepare garlic butter, add to chips and parmesan, toss well, serve immediately
PISTACHIO LATTE
Ingredients
Pistachio paste as required to decorate
Ingredients for Drink
Hot water ½ cup mixed with 2 tsp instant espresso
Pistachio paste 1 tbsp
Milk ½ cup
Condensed milk 2 tbsp
Crushed ice as required
Vanilla ice cream 2 scoops
METHOD
Blend all together, serve immediately.
