INGREDIENTS
• 2 cups Long grain Rice or wild rice (rinsed and washed)
• 1 tbsp Unsalted Butter
• 1 cup Spanish Onion (Finely Chopped)
• 1 tbsp Cooking Oil (Grapeseed Oil or avocado oil)
• 1 cup Carrot (Finely Diced)
• ½ cup Red Pepper (Finely Diced)
• 1 tsp Old Bay, Creole, or Cajun Seasoning
• ¼ tsp Dried Basil
• 2 Bay Leaves
• 1 tbsp Lemon Juice
• 3 cups Chicken Broth
• Salt & Pepper (to taste)
• 1 tbsp Coconut Cream (optional)
• 1 tbsp Parsley (chopped)
INSTRUCTIONS
• In a pot over medium-high heat, melt avocado oil and butter.
• Sauté Aromatics: Add chopped Spanish onion and sauté for about 3 minutes, until translucent.
• Stir in chopped carrots and red bell pepper. Cook for an additional 2 minutes, or until slightly tender.
• Add your preferred seasoning (Old Bay, Cajun, or Creole) and pre-washed long-grain rice. Stir and cook for 1 minute to lightly toast the rice.
• Pour in chicken broth. Give it a quick stir and bring the mixture to a slow simmer.
• Stir in dried basil, bay leaves, and lemon juice .
• This is also the optional step to add coconut cream for a tropical hint.
• Cover the pot, reduce the heat to low, and let it simmer for 15 minutes, or until all the liquid has been absorbed.
• Remove the lid and gently fluff the rice with a fork.
• Sprinkle with freshly chopped parsley and adjust the seasoning with salt and ground pepper to your taste.
