MARINADE FOR DRUMSTICKS
Olive Oil
Minced garlic
Red pepper flakes
Red bell pepper
Garam masala
Oregano
Fresh cilantro
Dried parsley
Italian seasoning
Garlic + onion powder
Chicken seasoning
Pepper
Juice from a lemon
Honey
Browning
*Butterfly drumsticks then toss with marinade, put in fridge minimum of 30 minutes covered
*Sear chicken both sides till brown, place chicken in oven on 390F 20-25 minutes
REMAINING MARINADE
add:
left over marinade to pan
Chicken broth
Buillon powder
Herb butter (choose desired butter amount and your choice of herbs, I used cilantro, parsley, basil, minced garlic, bell pepper, can add small amount of salt if using unsalted butter)
Coconut aminos (optional)
Additional honey and lemon slices
Goya added for color (small amount, optional)
Add drumsticks into sauce, put heat on Simmer/low till sauce thickens and baste chicken with sauce
*season to taste
YELLOW RICE
Basmati rice
Mixed Vegetables
Shallot
Yellow onion
Minced Garlic
Tumeric
Saffron threads
Buillon Powder
*First soak saffron threads in 1/4 cup of warm water set aside to bring out flavor and till water turns color(remove threads prior to adding to pan) , Sautee garlic, shallot, yellow onion, turmeric, add rice and sautee till lightly brown, add saffron liquid, broth and bouillon powder, till rice is fully cooked
*season to taste
