The ‘seasoning’ on cast iron is a protective barrier of polymerized(not liquid) oil. The more you use your cast iron, the more layers of seasoning you naturally build, meaning more layers of protection.
Although it’s possible to impart iron into your food from cooking in cast iron(mainly with acidic foods) it seems to be very insignificant, especially the more seasoned your cast iron is.
Even anecdotally I can say that I cook with cast iron every day, usually several times per day, and my annual blood work is always normal.
