2 | eggs 雞蛋
6g | butter 牛油
Salt and black pepper 食鹽及黑胡椒
1tsp | crème fraiche 法式酸奶油
Chives 蔥
Method 煮製方法
1. Crack the eggs into a deep saucepan. 把雞蛋打入完平底鍋
2. Add the butter. For smaller batches, use a 2-to-1 eggs-to-butter ratio. 加入牛油,對於煮較少份量的,可以用雞蛋與牛油的比例為2:1
3. Put the pan on high heat. 把鍋加熱至大火
4. Stir continuously with a rubber spatula—don't whisk—making sure to scrape the bottom of the pan. 用膠刮刀不停地攪拌,確保要刮到底部。
5. After 30 seconds, take the pan off the heat. Keep stirring. After about 10 seconds, put back on the heat. Repeat for 3 minutes. 30秒之後,把鍋從火爐上拿下來,繼續攪拌。大約10秒鐘後,再加鍋放回上爐頭上繼續攪拌,重複以上步驟3分鐘。
6. In the last minute, season the eggs lightly and add chopped chives. For extra creamy texture, stir in 1 tsp of crème fraîche. 在最後1分鐘,給加入少少調味料及蔥花。想口感更加柔滑,可加入1茶匙的法式酸奶油然後攪拌至均勻即可。
