Michelin-starred and visionary chef Davide Guidara shares his choice to rewrite the rules of haute cuisine by opening a 100% vegetarian restaurant. A radical decision that breaks conventions and self-imposed limits, born from a sense of coherence and vision. As he puts it: “Compromise is the death of the avant-garde.” Davide Guidara is a Michelin-starred chef known for his groundbreaking work in plant-based fine dining. After years of experience in prestigious kitchens including Don Alfonso, Michel Bras, and Noma, he developed a personal culinary vision rooted in minimalism, umami, and essentialism. At his restaurant I Tenerumi on Vulcano Island, he redefines vegetables as the protagonists of high cuisine. Founder of the Cook More Plants movement, he advocates for a new narrative around plant-based gastronomy. His accolades include Michelin Green Star, Best Young Chef 2023, and Forbes 30 Under 30.
