Off Menu Feast at Shanghai’s French Bistro - Villa Le Bec

年初與同事們相聚於上海 Villa Le Bec，這麼多年來，這裡依然是我們的白月光。那晚 Chef Nicolas 特別加碼了 off menu ，驚喜連連。

「隱藏菜單」中首先登場的是黑松露洋蔥咸塔，採用類似法式翻轉蘋果塔的做法，焦化洋蔥的甜美與打發黑松露鮮奶油的醇厚交織在一起，令人驚艷。端上巨大的龍蝦蟹肉捲心菜(Chou Farci) 香氣撲鼻，濃縮了海鮮的精華，每一口都滿溢鮮美滋味。

Villa Le Bec的法式酥皮肉凍派Pâté en Croûte，是上海最地道；牛蛙腿搭配歐芹與番紅花醬汁，酥脆的外皮下是細膩多汁的口感;香煎鴨肝搭配覆盆子也毫不遜色。當晚Nicolas為我們安排的甜品是「巨型」檸檬冰淇淋，足足有20 人的份量，帶來了極大的滿足。

在Villa Le Bec，從來不會令人失望.

At the beginning of the year, my colleagues and I gathered at Villa Le Bec in Shanghai. After all these years, this place remains our timeless favorite. That night, Chef Nicolas surprised us with an off-menu selection, bringing one delightful surprise after another.

The first dish was a tart with caramelized onions and black truffle whipped cream, kind of looks like a savory version of Tarte Tatin. The caramelized onions’ sweetness intertwined with the richness of black truffle cream, creating a stunningly flavorful bite. Next came an enormous lobster and crab-stuffed Chou Farci, its intoxicating aroma filling the air. Each bite was an explosion of deep seafood flavors, condensed to perfection.

Villa Le Bec’s Pâté en Croûte is one of the most authentic in Shanghai. The frog legs, paired with parsley and saffron sauce, were fried to crispy yet tender and juicy. The pan-seared foie gras with raspberries on brioche was equally impressive, balancing richness with a vibrant fruity contrast.

To end the evening, Chef Nicolas surprised us with a “giant” lemon ice cream dessert—large enough to serve 20 people! It was the perfect finale, leaving us all utterly satisfied.

At Villa Le Bec, one thing is certain—it never disappoints.
