Ingredients
Marination of Chicken
300g Sliced Chicken
1 tsp Ginger garlic paste
1 tsp Red chilli powder
1/2 Lemon Juice
1 tsp Red Chili Powder
1/2 Garam Masala
1/2 Turmeric
1/2 Dry Fenugreek Leaves
1 tsp Vegetable Oil
Salt to taste
Sauce
2’’ Cinnamon
3 Black Cardamoms
5 Green Cardamoms
5-6 Garlic Cloves
6 Tomatoes Quartered
1 Onion Roughly Sliced
1 tsp Red Chilli Powder
1 tsp Salt
1 tbsp Vegetable Oil
1 tbsp Butter
1 tbsp Chopped Ginger
2 Chopped Chilli Deseeded
1 tsp Red Chilli Powder
1 tbsp Coriander Powder
1 tsp Garam Masala
1 Dry Fenugreek Leaves
1 tsp Garam Masala
1 tsp Sugar
Method
In a mixing bowl add the ingredients for marinating chicken and mix well, add chicken strips and marinate the chicken and leave it to rest for half an hour to three hours if possible.
In the meanwhile, heat-up oil and add cinnamon sticks, black and green cardamoms, ginger, garlic, tomatoes and onions and fry everything for 5-6 minutes.
Add a cup of water, chilli powder and salt. Cover the pan with a lid until oil separates from the sauce.
Now remove whole spices and carefully blitz tomato sauce little by little and strain the sauce to remove unnecessary sediments.
Now heat-up a pan and add oil and half of the butter, add finely chopped ginger and green chillies for a minute.
Put the flame on low and add chilli powder, coriander powder, garam masala and sugar. Fry the spices for 30 seconds and add strained tomato sauce. Stir well and sprinkle with dried fenugreek leaves and garam masala mix with spices.
Now heat-up a grill pan and add oil. Layaway marinated chicken and sear it from one side for 2-3 minutes. Flip over and sear the other side for 2-3 minutes or until it is cooked. Add seared chicken into the sauce and stir.
Finish butter chicken with cream and the rest of the butter.
