Using bits of salted cod (saltfish) we'll add some freshly chopped vegetables, herbs and scotch bonnet pepper to make an outstanding stir fry with Caribbean elements. Salt fish, salted fish or saltfish as it's known in the Caribbean will give this stir fry a lovely overall flavor, but you must first remove some of the salt it's dry cured in. Place the salted fish in a pot of boiling water, boil on low for 20 minutes, then drain and rinse. Then shred for use.
You'll Need..
3/4 cup salted fish (flaked)
1 cup carrots (juillene)
2 cups cabbage
1.5 cups bell peppers (use any colur you like)
2 scallions
1 medium onion
2 tablespoon vegetable oil
pinch black pepper
1/4 teaspoon grated ginger
1 teaspoon dark soy sauce
1 teaspoon fresh thyme
1/4 scotch bonnet pepper
