The main ingredient is a batter made from finely ground, soaked *raw rice* and cooked rice, which, combined with the toddy or yeast and a touch of sugar, is allowed to ferment overnight. This fermentation process is crucial, as it creates the soft, aerated texture. Unlike the lacy, bowl-shaped Appam*, *Kallappam is typically a small, thick, and circular pancake cooked on a flat griddle or pan. The result is a uniformly spongy bread, pristine white in colour, with a tender crumb.
