@HowToBloke makes a classic traditional creamy Chicken and Asparagus Fricassee - UK/English style. 👉 If you want to add a splash of white wine or vermouth, add it during the sauté stage. For example; whilst cooking the asparagus, because doing this will give the alcohol enough time to evaporate/boil-off before serving. Do not add the wine/vermouth at the simmer stage or anywhere near the end of cooking because you'll probably be able to taste the alcohol, which is not a good flavour sensation (in this dish).
👉 I used fresh-then-frozen whole untrimmed asparagus that had been completely thawed to room temperature. Thawing is important if you need to trim the, "woody" part off because, if the whole asparagus is still frozen solid, you wouldn't be able to tell where the woody part of the asparagus ends and the softer edible part of the asparagus begins.
