RECIPE:
Salted Egg Yolk Filling:
2 Salted Egg Yolks (steamedfor 15 minutes)
30gm Icing Sugar
20gm Milk Powder
30gm Unsalted Butter
Custard Filling:
3 Egg Yolks
60gm Castor Sugar
30gm Custard Powder
50gm Corn Flour
180ml Milk
Snowskin:
150gm Cooked Glutinous Rice Flour*
105gm Icing Sugar
35gm Vegetable Shortening
90ml Milk
*Cooked Glutinous Rice Flour is called Koh Fun in Chinese. If it is not available, you can toast normal Glutinous Rice Flour. Toast in oven at 160c, for 15 minutes until it turns light yellow in colour, stirring a few times along the way. Or toast in a pan over low heat until the flour turns light yellow, stirring continuously.
